Slow Cooker Beef with Bourbon and Coke

When Mel was younger, an impulse-buy at the supermarket register would be a KitKat or an Us Weekly magazine.  Now: slow cooker recipe magazines.  The collection is growing.  Very possible we now have more than one for every season.  The recipes likely do not vary much.  But Mel's obsession with the convenience of this one appliance does not waver.  It has created a never-ending thirst for finding even more creative ways to put a lot of ingredients in one pot, leave it alone all day, and remove the lid to find a finished meal (coupled with an overwhelming sense of efficiency).

The latest addition to the collection:

The first recipe that caught Mel's eye (Mel loves Coke, DJ loves bourbon, both love beef: ta-da!):  

Overall, the recipe was very easy to follow.  One thing that was surprising: salt is not mentioned in the ingredients.  The instructions indicate that you "season with salt and pepper to taste."  We're not hugely into salt, so we figured we'd give it a chance without adding anything.  But when we did the first taste-test, the beef and sauce really did seem a bit bland.  As soon as we added a bit of salt, the flavor of the bourbon and sweetness of the cola came forward nicely.  We didn't have time to make the suggested Celery Root Mash, but we would like to try that eventually because they sound like they'd go well together.  Instead, we quickly whipped up a bit of couscous and a small side salad instead.  Tasty!
