Green Goddess Dressing

We were lucky enough to have a visit from Alex and Shannon on the weekend we celebrated Toots's 80th birthday!  In the moments we weren't partying with the whole family, we had some quiet time in the house and Alex offered to make us his famous Green Goddess dressing.  He said it's a recipe that's healthy, tasty and comes in handy when you have a lot of basil on hand (which we do now thanks to our veggie garden - the basil is thriving!).

This is the original Green Goddess Dressing recipe Alex found and has tweaked over time to his personal flavor preferences.  Just in case the website should ever disappear, here's the direct text from TheKitchn.com:


 

Alex and Shannon suggested enjoying the dressing with a total vegetarian stir fry of extra firm tofu, zucchini, carrots, kale, spinach, and cauliflower rice.  The end result: pure veggie heaven! 

The Green Goddess is so flavorful and has the most refreshing aftertaste.  Such a satisfying way to enjoy greens.  We can't thank the Oakland crew enough for introducing it to us!

It's also worth noting that the dressing can last a few days in the fridge.  Mel and DJ wound up enjoying the leftovers for lunch for a few days, which led to this slight moral dilemma:

 There may have been a few tears shed when the last bit was finished.  But we'll certainly try to make it again on our own (or ask Alex to ship it to us weekly... whichever makes more sense).
