Quinoa Lasagna - O.M.G.

Though Mel has been trying to cut back on the amount of time she spends on Facebook, it's hard to resist the random nuggets of info one can glean from a News Feed.  Including recipes!!  One day an old elementary school friend posted this link to a recipe for quinoa lasagna and it looked good enough to try.  

The recipe is so simple, it's almost a joke.

You cook your quinoa (we decided to substitute some of the water for a cider beer to add some flavor).

While it's cooking, you chop up the fresh basil (smells SO scrumptious).

Once most of the water has evaporated from the quinoa and you see the little steam holes popping up, you take the quinoa off the stove and pour it into a bowl.

Add your basil (the recipe says only 2 tbsp. but we put a ton more because we love the taste), marinara sauce, and shredded cheese and mix thoroughly.  We added some salt, pepper, and red pepper flakes to taste.

Place neatly in a baking dish, top with the remaining basil and shredded cheese, and bake.

The end results: Mel was so bowled over by the amazing flavor that she threw the potholders down on the floor and did a victory dance around the kitchen.  We will DEFINITELY be making this instead of pasta lasagna REGULARLY.  In a word: amazing.
